Creamy Ricotta Tomato Sauce


Saffron's Table: CREAMY RICOTTA TOMATO SAUCE

This is probably one of the quickest tomato sauces that you can make. It is an excellent meal to make after a long day at work. It pairs well with tortellini or ravioli.

 

CREAMY RICOTTA TOMATO SAUCE

6-8 servings

EVOO

1 Onion, diced

5 cloves Garlic, crushed

200 g Ricotta

500 g Tomato Puree

1 tablespoon (heaping) Tomato Paste

1/4 cup Parmesan or Pecorino Romano, grated

10 Fresh Basil Leaves, whole

Salt & Peper, to taste

Heat enough olive oil to coat the bottom of a large pan. Add in the diced onions and cook over a medium high until transparent, not caramelized. Add the garlic and be sure not to burn it.

Add the ricotta to the pan and mix in well with the onions and garlic.

Add in the tomato puree, tomato paste, and grated cheese. Stir well and bring to a simmer.

Cook on the stove over medium heat for approximately 15 minutes, tasting often, and adding salt and pepper to taste. Add the basil about a minute before the sauce is complete.
